Yes I have, unfortunately, the solution can be a bit time consuming to implement.
Under default user preferences you will need to set "Email display " to "hide my email address from everyone"
this will ensure that all new students email will be hidden, you then need to edit all existing student profiles changing each to "hide my email address from everyone"

Once this is all done the email icon will no longer be visible in the app.

Take note though that the students will be able to change it back unless you disable their ability to edit their profile.
